De Buyer has introduced a new frying pan model designed especially for us – the lovers of their iron pans! It’s their popular Mineral B frying pan, now with an even more rustic finish thanks to the beechwood inserts in the handle. These inserts make cooking more comfortable, help prevent burns, and give the pan a beautiful appearance. I find it absolutely gorgeous!
The Mineral B iron pans by De Buyer are ideal for healthy cooking, as they are made from iron without any chemical treatments or synthetic coatings. They’re perfect for searing meats, sautéing vegetables or frying eggs. They are also suitable for all heat sources, including induction.
| Top diameter | Base diameter | Height |
| 20 cm | 13.5 cm | 3.3 cm |
| 24 cm | 17.5 cm | 3.9 cm |
| 26 cm | 18 cm | 4 cm |
| 28 cm | 20 cm | 4 cm |
| 32 cm | 25.5 cm | 4.2 cm |
It's the same Mineral B iron frying pan, but with beech wood inserts in the handle, which give it a more rustic look and make it more comfortable to hold.
No, because of the wood in the handle. If you want to finish dishes in the oven, there's the Mineral B with a stainless steel handle.
Look at the base: 13.5 cm on the 20 cm pan, 17.5 cm on the 24 cm, 18 cm on the 26 cm, 20 cm on the 28 cm and 25.5 cm on the 32 cm.
Yes, it works on all hobs, including induction.
Yes, just once, before first use. It leaves the factory with a protective coat of beeswax, and seasoning it with oil starts the patina that will gradually make it non-stick. You'll find the step-by-step in our seasoning and care guide.
Because the non-stick layer builds up with use, not with seasoning. For the first few weeks, heat the pan gradually over a medium heat, use a little more oil and don't move the food until it releases on its own. The more you use it, the better it gets.
With water, a little washing-up liquid and a soft sponge; if anything has stuck, you can use a scouring pad without worrying. Dry it straight away and wipe it with a thin layer of oil. It isn't dishwasher safe and shouldn't be left to soak.
Yes, and it's a good sign. The dark, uneven colour is the patina, which improves the non-stick effect and protects it from rust. The blacker it gets, the better it cooks.
Rust can appear if it's left damp, because it's uncoated iron. If it's a small spot, rub it with kitchen paper and a few drops of oil; if it's bigger, go over it with a scouring pad, dry the pan and season it again. Under the iron there's more iron: it won't be ruined.
In France. De Buyer's Mineral B pans are certified as over 99% pure iron and have no coatings or chemicals.
