The popular De Buyer iron pans are now also available in a wok format! Just like De Buyer's Mineral iron pans, these woks are eco-friendly, recyclable, offer 100% natural cooking, are free of non-stick coatings, heat up incredibly fast, and are built to last a lifetime.
Cooking in a wok means quickly searing food, and there's no better way to do it than with an iron pan like this: iron is the material that retains the most heat. Not only does it heat up incredibly fast and retain heat well, but that heat sears food quickly, resulting in wonderfully stir-fried vegetables, meats, and fish. You'll see how they turn golden on the outside, crispy, and full of flavor and nutrients on the inside. No wonder the authentic Asian woks are made of iron!
The 24 cm and 28 cm woks are available in two designs:
This is a traditional iron wok that will last a lifetime and delivers wonderful searing results. It's a heavy pan, but it's worth its weight in gold and will last a lifetime in your kitchen!
Don't forget to check out our protective handle cover for De Buyer iron pans, which will help prevent burns when handling the pan.
| Top Diameter | Bottom Diameter | Total Length | Weight | Height |
|---|---|---|---|---|
| 24 cm | 8.8 cm | 43.7 cm | 1.4 kg | 8 cm |
| 28 cm | 9.2 cm | 50.4 cm | 1.76 kg | 9 cm |

| 40 cm | 12 cm | 69 cm | 2.75 kg | 10.4 cm |
The traditional one has a narrow base and a deeply concave shape, perfect for Asian-style stir-frying. The domed one, available in 24 and 28 cm, has a wider base: it's more stable, easier to fill and also works as a deep frying pan for gently softening vegetables with very little oil.
Yes, on all hobs. On induction and ceramic hobs, the domed design, with its wider base, makes better use of the heat. The base of the traditional wok ranges from 8.8 cm (24 cm) to 12 cm (40 cm).
For 1-2 people, the 24 cm; for 3-4, the 28 or 32 cm, better too big than too small. The 40 cm is for large quantities. The 32 and 40 cm woks have a helper handle.
Yes, just once, before first use. It leaves the factory with a protective coat of beeswax, and seasoning it with oil starts the patina that will gradually make it non-stick. You'll find the step-by-step in our seasoning and care guide.
Because the non-stick layer builds up with use, not with seasoning. For the first few weeks, heat the wok gradually over a medium heat, use a little more oil and don't move the food until it releases on its own. The more you use it, the better it gets.
Better not. Serve the food when it's done or move it to another dish, especially if it contains tomato, wine, vinegar, lemon or curry-type sauces: acids and moisture attack the patina, can darken the sauce and give it an iron taste.
With water, a little washing-up liquid and a soft sponge; if anything has stuck, you can use a scouring pad without worrying. Dry it straight away and wipe it with a thin layer of oil. It isn't dishwasher safe and shouldn't be left to soak.
Yes, and it's a good sign. The dark, uneven colour is the patina, which improves the non-stick effect and protects it from rust. The blacker it gets, the better it cooks.
Yes, because it's made of iron. Use an oven glove or the De Buyer handle cover.
Yes, for up to 10 minutes at 200 °C.
