The Emile Henry papillote ceramic dish is a ceramic tray ideal for perfect papillote cooking in the oven. Its lid allows for gentle and even cooking, preserving all the flavor, aroma, and properties of the food, with absolutely delicious results.
The design of the dish, in any of its sizes, makes it perfect for applying the papillote cooking technique, whether for fish, vegetables, or white meats (such as chicken or turkey). But it doesn't end there, because it is also a great tray to use without the lid as a roasting dish for all kinds of recipes. You can already see how much use you’ll get out of it, right?
Additionally, Emile Henry ceramic does not scratch, you can safely cut food directly on it, and it is such a beautiful dish that you’ll want to bring it to the table and serve directly from it. You’ll love opening the lid in front of your guests and hearing that "Ooooh" they’ll lovingly give you.
For the best results, it is recommended to place the whole or cut fish in the center of the dish, add vegetables or your preferred side around it, season, and drizzle with a little oil. Then, close the lid and cook in a preheated oven at 200 °C.
30.5 x 17.5 cm, in red and in black, and 41 x 24 cm, in red.
Put the fish, whole or in pieces, in the centre with the vegetables around it. Season, add a splash of oil, put the lid on and place it in an oven preheated to 200 °C. You don't need paper: the lid does the papillote.
The papillote dish has a lower lid, designed for steaming fish, vegetables or white meat without wrapping them. The chicken roaster has a tall lid for roasting whole pieces, although it also works for fish.
Yes, as a roasting dish for any recipe. You can also cut inside it without scratching it and take it straight to the table: it keeps food warm for a good while.
The only thing ceramic doesn't like is sudden changes in temperature. When you take it out of the oven, set it on a rack, a wooden board or a tea towel rather than a cold surface such as the worktop, and don't put it straight from the freezer into a hot oven. It is also not for use directly on a flame or a hob.
